How much coffee for a single pour-over cup?

A pour-over dripper on a glass mug mid-pour

For a single pour-over cup, use about 15 g of coffee, which is 3 level tablespoons or 1.5 scoops, with 8 fl oz (237 g) of water at 1:16. For a 12 oz mug, use 22 g, which is about 4.5 level tablespoons or 2.2 scoops. Pour at 92 to 96 °C (198 to 205 °F).

What is the dose for one cup, by cup size?

A level tablespoon of ground coffee is about 5 g, and a scoop is 2 tablespoons (about 10 g). Water is 29.6 g per fl oz. If you want every size and every ratio, our pour-over ratio cheat sheet has them, and the 8 oz of water page covers the generic cup. This page sticks to one cup in a dripper.

Cup Water 1:15, stronger 1:16, default 1:17, lighter
Small cup 8 fl oz (237 g) 16 g 15 g, 3 tbsp 14 g
Mug 10 fl oz (296 g) 20 g 18 g, 3.7 tbsp 17 g
Large mug 12 fl oz (355 g) 24 g 22 g, 4.4 tbsp 21 g
Two small cups 16 fl oz (473 g) 32 g 30 g, 6 tbsp 28 g

A little water stays in the grounds. Count on roughly 2 oz lost per 20 g of coffee, so pour a bit more if you need a full mug. The rest of the sizes are on the how much coffee per cup page.

How do you brew one cup, step by step?

This is the one-cup version for a 15 g, 8 fl oz brew. Beginners should start with pour-over for beginners, which has the gear list.

  1. Rinse the paper filter with hot water and pour the rinse out.
  2. Add 15 g of medium-ground coffee and tare the scale.
  3. Pour 30 g of water (twice the weight of the coffee) and wait 40 seconds. This is the bloom.
  4. Pour slowly in small circles up to 237 g of water in total.
  5. Let it drain. A one-cup brew is usually done in roughly two to two and a half minutes.

If the cup is sour or weak, see pour-over coffee too sour and pour-over coffee too weak. If it is harsh, pour-over coffee too bitter.

What grind and temperature work for one cup?

Use a medium grind, like coarse sand, and water just off the boil, 92 to 96 °C (198 to 205 °F). A small cup has little coffee in the bed, so the bed cools quickly, and a slightly hotter kettle helps. Rinse the filter and warm the mug first. If the water runs through in well under two minutes and the cup tastes sharp, grind finer. If it takes over three and tastes dry, grind coarser. Change one thing at a time. The cheat sheet linked above has the full grind and time table.

How do you scale it to two cups?

Double the coffee and the water, and keep the ratio. Two cups is 30 g of coffee and 473 g of water, with a 60 g bloom. The bed is deeper, so the brew takes a little longer, around three minutes. If you go further, to a 3 cup brewer, the numbers are in how much coffee for a 3 cup Chemex.

One cup Two cups
Coffee 15 g 30 g
Level tablespoons 3 6
Water 237 g (8 fl oz) 473 g (16 fl oz)
Bloom 30 g, 40 seconds 60 g, 40 seconds
Approximate time 2:00 to 2:30 About 3:00

Which coffee for a slow single cup?

The roaster calls No. 2 Good Sense the slow first cup, when you actually want to taste something. Its brewing note is pour-over at 60 g per litre, 94 °C and a 40-second bloom, and to drink it black, because a natural Ethiopia goes to fruit and milk buries it. At 60 g per litre, one 8 fl oz cup is about 14 g, and a 12 fl oz mug is about 21 g, so it sits near the 1:17 column.
