For a 12 oz iced coffee, use 22 g of coffee (4.5 level tablespoons, or 2 scoops) and brew it hot with about 6 oz (178 g) of water directly over 6 oz (178 g) of ice. That is double strength, a 1:8 ratio on the hot water, and it lands at 1:16 once the ice melts. The full table for 12, 16 and 24 oz glasses is below. If you want the logic behind grams, level tablespoons (5 g each) and scoops (2 tablespoons), start with how much coffee per cup.
How does flash brewing change the ratio?
Pouring hot coffee over ice cools it in seconds. The ice melts into the drink, so the coffee has to be brewed stronger than normal to end up at a normal strength. The easy rule is to split the water: about half hot water, half ice, with the coffee amount set for the total. That means the coffee for the whole drink goes into a brewer that only gets half the water.
The numbers below assume the ice melts into the drink completely and that you brew onto the ice directly. If you add extra ice to the glass after, the drink gets more dilute, so use a little more coffee or fewer cubes.
What is the table for 12, 16 and 24 oz glasses?
Here is the chart in numbers. Tablespoon and scoop counts are rounded to the nearest half.
| Glass (final drink) | Coffee | Hot water | Ice |
|---|---|---|---|
| 12 oz (355 g) | 22 g, 4.5 tbsp, 2 scoops | 178 g (6 oz) | 178 g |
| 16 oz (473 g) | 30 g, 6 tbsp, 3 scoops | 237 g (8 oz) | 237 g |
| 24 oz (710 g) | 44 g, 9 tbsp, 4.5 scoops | 355 g (12 oz) | 355 g |
12 oz glass: 22 g of coffee
16 oz glass: 30 g of coffee
24 oz glass: 44 g of coffee
For a stronger iced coffee, go to 1:15, which is 24 g, 32 g and 47 g for the three sizes. For a lighter one, 1:17 is 21 g, 28 g and 42 g.
How do you brew it?
- Put the ice in the carafe or glass first. Weigh it so you know how much there is.
- Rinse a paper filter, and add the coffee, ground medium, a touch finer than for hot coffee.
- Pour the hot water (just off the boil) over the grounds in slow circles, and give it a short bloom.
- Let it drip onto the ice. Swirl until the ice has mostly melted.
- Pour over fresh ice if you like it very cold. Taste before you add milk.
If you use a drip machine, put the ice in the carafe and set the machine to half the water it would use for a full pot. For a full recipe with a specific coffee, see iced No. 8 Consent, flash brew recipe.
Is iced coffee the same as cold brew?
No. Flash brew is brewed hot and chilled right away, which keeps the bright notes. Cold brew steeps for hours and tastes softer. Our cold brew vs iced coffee comparison covers the difference. Cold brew has its own ratio, shown in coffee ratio by brewing method.
