Switching from dark roast to whole bean single origin: what to buy

Drip coffee maker with a full pot beside an empty mug on a kitchen counter

If you are switching from dark roast to whole bean single origin, start with one bag: No. 6 Hegemony. It is a Medium roast from Parana and Sao Paulo, Brazil, with cocoa and smooth on the label, so the cup stays in the chocolatey territory you know. Brew it in your usual drip machine at 3 level tablespoons per 8 fl oz of water (about 60 g per litre), and treat the first pot as a calibration.

What actually changes when you switch?

Nothing is wrong with the coffee you drink now. A darker roast tends to bring roasted, bold flavors forward. A lighter one lets more of where the coffee grew show through, such as fruit or floral notes. A single origin coffee comes from one region and shows that region's character.

All three bags we suggest below are declared as Medium by Temecula Coffee Roasters. They are not as far toward the light end as some people fear. Two things change in practice: the label tells you the notes to look for, and the beans are whole, so you grind them before brewing (or order them ground).

Which bag should you start with?

No. 6 Hegemony No. 1 Common Sense No. 7 Praxis
Origin Parana and Sao Paulo, Brazil Huila and Medellin-Antioquia, Colombia Antigua, Guatemala
Process Pulped natural, sun dried Fully washed, solar dried Fully washed, sun dried
Roast Medium Medium Medium
Notes Cocoa, smooth Cocoa, red apple, brown sugar Dark chocolate, bright fruit, butterscotch
Best for The pot everyone drinks Every morning, takes milk Working out what you like

Hegemony is our first suggestion because it has the fewest new flavors to learn. The roaster describes it as low acidity and heavy body, which makes it hard to ruin. Common Sense is the second step, adding red apple to the cocoa. Praxis is the third, with bright fruit alongside dark chocolate, and the roaster calls it the one for working out what you actually like.

How do you brew it the first time?

  1. Measure 3 level tablespoons of coffee for each 8 fl oz of water. See how much coffee per cup for your machine's pot size.
  2. If you have whole beans, grind them just before brewing, at a medium setting. If you ordered ground, skip this step.
  3. Use water just off the boil, which is what the roaster suggests for drip.
  4. Taste it black first, then add whatever you normally add.

The roaster also says Hegemony works as cold brew at 1:8 overnight. For everything else about measuring, how many tablespoons in a coffee scoop covers the scoop in your machine.

How do you know when to move on?

Brew the same bag twice before you judge it. Praxis is useful here: the roaster suggests making it once at 60 g per litre and once at 70, and keeping whichever you preferred. That tells you how strong you like your coffee, which carries over to every bag after it.

Once Hegemony feels familiar, try the next bag in the table. You can see single origin ground coffee for a drip machine if you prefer to keep it simple, or browse all ten coffees.

What stays the same?

Your machine, your mug, your milk and your routine. A single origin bag does not need new gear. It needs the same spoons and the same water, with a label that tells you what to expect. The roaster is Temecula Coffee Roasters in Temecula, California, and every bag lists its region, process and notes, so you are never guessing what is inside.

What if the first pot is not what you expected?

If it tastes thinner than your usual, you are probably used to a heavier dose or a darker roast. Add half a level tablespoon per 8 fl oz and try again. Once you start grinding at home, keep the grinder clean, because old grounds can change the taste of a fresh bag. We cover that in how to clean a coffee grinder.

Do not mix the new bag into the old one. Brew it on its own for a few pots, so you know what the new bag tastes like, then decide.

What does it cost, and can you keep it coming?

Every bag is $28 for 12 oz, whole bean or ground, with free shipping in the US. One price for all ten means you can pick on taste. The subscription is 11% off, with skip or cancel in one click.

Start with one bag, change one thing at a time, and the rest follows.
