For 12 oz of water, use about 22 g of coffee, which is 4 level tablespoons or 2 scoops (2 tablespoons each) at the standard 1:16 ratio. That is 1 part coffee to 16 parts water by weight, and 12 fl oz of water weighs about 355 g. For a stronger cup, go to 24 g (1:15). For a lighter cup, use 21 g (1:17). The pillar page, How much coffee per cup, explains the ratio in full.
What does the chart say from 1:15 to 1:17?
Here is the same 12 oz (355 g) of water at three ratios. Tablespoons are level and count 5 g each.
| Ratio | Strength | Coffee in grams | Level tablespoons | Scoops (2 Tbsp) |
|---|---|---|---|---|
| 1:15 | Stronger | 24 g | about 4.7 | about 2.4 |
| 1:16 | Standard | 22 g | about 4.4 | about 2.2 |
| 1:17 | Lighter | 21 g | about 4.2 | about 2.1 |
In practice, 4 level tablespoons (20 g) is close enough for most people, and 5 is a stronger mug. A scale is more accurate than spoons, because ground coffee packs differently depending on the grind. If you do not own a scale, read how to measure coffee without a scale, or how many grams are in a tablespoon of coffee.
Does the amount change by brewer?
A little. These are starting points, not rules, and you can adjust after the first cup.
| Brewer | Where to start for 12 oz of water |
|---|---|
| Drip machine | 22 g (about 4 Tbsp), see the pillar page |
| Pour-over | 22 g, or 21 g for a lighter cup, see the pour-over cheat sheet |
| French press | 22 to 24 g, see the French press ratio chart |
For other water amounts, 8 oz of water, a 20 oz tumbler and 1 liter of water each have their own chart, and the ratio chart by ounces covers the rest. If you use ounces for the mug, the full list of mug sizes is in how many ounces are in a cup of coffee.
How many mugs does a 12 oz bag make?
A 12 oz bag holds about 340 g. At 22 g per 12 oz mug, that is about 15 mugs. At 24 g, it is about 14. The full breakdown is in how many cups of coffee are in a 12 oz bag.
What coffee works for this ratio?
Any of our ten will work, since the ratio belongs to the method and not the bean. For an everyday mug we suggest No. 1 Common Sense. The roaster's guidance for it is 60 g per litre, which works out to about 21 g for 12 oz of water, right in the middle of the chart above. It takes milk without falling apart.

Why use weight instead of spoons?
A level tablespoon is a convenient 5 g, but it is only an approximation. A fine grind packs tighter than a coarse one, and a heaped spoon can be 7 or 8 g. Over a 12 oz mug, that is the difference between a balanced cup and a harsh one. If you only have spoons, level them off with a knife, and use the same spoon each time so the result is repeatable.
What if your mug is not 12 oz?
Scale the numbers. Each ounce of water needs about 1.85 g of coffee at 1:16, which is a little over a third of a level tablespoon. A 10 oz mug takes about 18 g, a 14 oz mug about 26 g, and a 16 oz mug about 30 g. Remember that a mug labeled 12 oz often holds more than that when filled to the brim, so measure the water you actually use.
How do you tune the strength?
Change the dose by one gram at a time and keep the water the same. If the cup is weak or watery, add a gram. If it is harsh or heavy, take one away. Grind and brew time also affect strength, but the dose is the simplest thing to change and the easiest to track.
Weigh 22 g, pour 12 oz of water, and adjust by one gram at a time.
